It’s common knowledge that in Modena we like to eat well, and this is proved by our penchant for traditional Balsamic Vinegar. We know it’s just a dressing. Even so, we’re willing to wait for years for it to become just as it should be. And throughout all these years, we care for our vinegar by transferring it from one cask to the next until
it has fully aged. Only then is it time to draw it from the cask, submit it to a Commission of Expert Tasters for their assessment, receive the document certifying that it is Traditional Balsamic Vinegar of Modena, bottle it in the special 100 ml bottle designed by Giugiaro and bring it to the table.
25 years in the barrel is a very long time. It is during this lengthy period that the cooked must matures and acquires all the properties of the wooden barrel in which it is maintained. Thus the resulting product is a glossy brown dressing with a unique, full-bodied and persistent flavour. A flavour that’s impossible
to describe unless you have sampled the product. It’s the ideal pairing for Parmigiano-Reggiano cheese, strawberries and ice-cream. It’s wonderful over meat, delicate mousses and cheese. And since it is traditional balsamic vinegar, it’s an excellent digestive liqueur after a rich meal.

After resting for 12 years and being transferred from one cask to the next, the must reaches full maturity and is ready to receive the Traditional Balsamic Vinegar classification. A dressing with a persistent flavour and aroma that fills the

For those who wish to experience and even more intense and enveloping flavour, we have created Settimo Cielo Più, an everyday dressing that enhances barbecued meat, fish, Parmigiano-Reggiano cheese and more besides.
You only need a few drops to create innovative dishes and enrich your traditional fare. Ours is a full-bodied dressing with a strong, lively taste that will give you great satisfaction and will never let you down.
Dressings and Preserves based on traditional balsamic vinegar
We also like to make jam with Traditional Balsamic Vinegar of Modena. Our jams are made from figs, cherries, pears, plums and many other types of fruit. They are excellent in cakes and desserts and surprisingly tasty with cheese. You can purchase them in our shop on the ground floor of our vinegar-making enterprise.
And for those who love light, flavoursome dressings with every dish, we’ve created “Settimo Cielo”. A sweet-sour intensely fragrant dressing. Ideal over vegetables, meat and fish. Delicious with omelettes and intriguing with cheese.
